PORK AND POTATO CASSEROLE
ingredients:
1 ½ lb pork loin or chops off the bone
2 tsp pork spice blend
1 bulb onion (chopped)
1 bell pepper (thinly sliced)
7-8 potatoes (peeled and sliced)
1¼ cups mayonnaise
¾ cup shredded cheese
¼ stick butter
Salt to taste
directions:
Pound pork to thin slices about ¼ in thick. On each piece sprinkle spice blend evenly and salt to taste. Cover and refrigerate for 2 hours or overnight. Grease the bottom of the rectangular baking sheet with high borders. Spread all the meat. Then layer onion, bell pepper and at last sliced potatoes. Salt potatoes. Spread mayonnaise on top and then sprinkle cheese evenly. Preheat oven to 425 F. Bake for 20-25 minutes. Reduce heat to 350 F and bake for additional 30 minutes.

You can add a layer of thinly sliced tomatoes and/or spinach leaves. There are a number of alternatives to mayonnaise in this casserole dish. For example:
1). 2 eggs beaten with 2 cups plain yogurt
2). 1½ cup milk and ½ cup cottage cheese
3). 1 egg beaten with ½ cup water + ½ cup white dry wine + 1 cup sour cream
4). 2 tbsp flour sautéed, whisk in 1 cup sour cream + 1 cup stock
5). 2 tbsp flour sautéed in 1 stick melted butter + 1½ cup milk
6). 2 tbsp flour sautéed, whisk in ¾ cup white wine and ½ cup water + 3 eggs beaten with 2 tbsp melted butter
7). ½ cup light beer + 1 cup sour cream
8). 1¼ cup Alfredo sauce
