| "GOULASH" (BEEF STEW) |
| ingredients: |
1½ lb beef for stew (cut into ¾ in cubes)
¾ tbsp beef spice blend
1 bulb onion (chopped)
1 carrot (cut into round slices)
1 red bell pepper (sliced)
4 ripe tomatoes
½ cup beef stock or water
½ cup red dry wine
2 tbsp melted butter or oil
1 tbsp flour
2 tbsp sour cream
parsley greens
salt to taste

directions: Salt beef to taste. Fry it fast in 1 tbsp of oil or butter till golden crust. Scald and skin the tomatoes. Combine the beef, spice blend, diced tomatoes, wine, stock or water. Stew covered in the oven for 1 hour for softness. Meanwhile sauté the onion and the carrots in 1 tbsp of butter over medium-low heat for 10 minutes. Just before finishing one hour of cooking, fry the flour in a non greased pan without color change and then slowly whisk in the sour cream. Mix well and pour this mixture into the meat. At this time also add the sautéed onion and carrot and sliced bell pepper. Cover and stew for an additional 30 minutes. At the end top with parsley greens. Garnish with mashed or boiled potatoes. |
ideas: Instead of tomatoes you can use 2 tbsp of sautéed tomato paste.
Add ¼ lb of sliced mushrooms while combining vegetables with the stew.
Instead of stock and wine you can use light beer (1 cup)
