| BAKED ONIONS WITH BEANS IN WALNUT SAUCE |
| ingredients: |
1¼ lb small onions (whole, unpeeled)
¾ cup dry Kidney beans
1 tsp vegetarian spice blend #2
1 ? cup walnuts
1 pomegranate (optional)
4 clove garlic
4 stem mint
½ cup apple cider vinegar
Cilantro (small bunch)
Dill weed (optional)
Salt to taste

directions: Soak the beans in cold water overnight. Drain and pour fresh water over the beans and bring to a boil. Cook over low heat till the beans are soft and then drain. Bake onions in the oven at 350 till the bulbs are soft. Cool a little, peel and slice into thin rings. To make the sauce, in the food processor mince walnuts and garlic. Add spice blend, vinegar, minced cilantro, mint and dill. Salt to taste. Mix well and combine with pomegranate seeds. In a bowl place beans with onion rings and pour over the sauce on top. |
